Lemon & Pineapple Cake

Layers of vanilla sponge filled with tangy lemon curd & fresh pineapple confit. The cake is topped with a thin layer of vanilla mousse to balance the tart lemon flavour and some pistachio crumble which adds some crunch. This cake is extremely light and is bursting with freshness.
